Souvlakia
Souvlakia are delicious Cypriot kebabs made from charcoal-grilled meat that has been cooked on a skewer, possibly with tomatoes, green peppers, and onions. The meat is traditionally pork or chicken, although vegetarians can opt for halloumi or mushroom instead. This is then served in a large, flat pitta bread with plenty of fresh salad.
A meatier version of this dish is souvla. Often cooked as part of a social gathering, pork, lamb, or chicken neck or shoulder is barbequed over charcoal for a couple of hours and then served with potatoes and other side dishes.
Halloumi
You simply can’t visit Cyprus without having some halloumi. This popular cheese is famous for its slightly salty taste and rubbery texture, and has a high melting point so it is usually fried or grilled before eating. It can also be enjoyed cold with salads. The cheese itself is created using goat and sheep milk which gives it its unique flavour.
Stifado
The ultimate comfort food, stifado is a beef casserole made with onion and plenty of red wine. Tomatoes have also been used in the recipe since they were introduced to Cyprus in the 16th century. The stew is cooked for several hours to ensure that the beef melts in the mouth, and is then served with rice or bulgur.
Kolokouthkia me ta afka
Kolokouthkia me ta afka is something that you might be offered as a side dish in Cyprus, and is made from courgettes and scrambled eggs sprinkled with salt. These may not be two ingredients you’d usually put together, but the end result is delicious!
